Don’t pay for Steven Raichlen’s master grill classes
THE DIRTY ARMY: Steven Raichlen has hosted bbq related shows dating back to the 1980’s on the PBS network. Despite authoring a book he named the BBQ Bible as well as referring to himself as a grill master he makes many common mistakes for a man of his stature and experience. He grills corn with the husks off which results in most of the colonels being burnt and in the process drying out the corn. He also grills pork shoulders as you would a steak. You aren’t supposed to grill pork like steak because it cooks low and slow. When you cook it high it gets dry and tough because all the juices flow out early. He ruined the smoke flavor of grilled shrimp by putting it into a bowl and covering it with parmesan cheese and basil (which he incorrectly pronounces ba-zill instead of bay-zill). He said coconut milk is exotic even though anyone can buy a can of it at any supermarket. When he smokes ribs or brisket he always ruins it by opening up the grill to “mop it” with his marinade every 15 minutes. When you smoke something you need to keep the lid shut because if you don’t it lets out all the smoke flavor. He also usually cuts most of the fat off of the meats which dry’s it out. Now these facts would be irrelevant if he isn’t planning on charging people $125 to attend his so called master grilling class in Baltimore in June. He hosts allot of classes like this and charges people money for false or bad information. Another thing I don’t like about him is he almost always uses these terrible and overly priced luxury grills and smokers. This gives inexperience people the idea that you have to buy them to get the job done when in fact you are fine with spending less than $300 on grills and smokers. Don’t take his advice on grilling and don’t pay for his classes because he is a scam artist.
